This refreshing Watermelon Lime Slushie is a low-carb, naturally sweetened summer beverage. Made with frozen watermelon, fresh lime juice, and a touch of low-carb sweetener, it’s a hydrating, vitamin-packed treat that’s quick to prepare and perfect for all ages.

  • Total Time: 10 minutes (plus 4-6 hours freezing time)
  • Yield: 4 servings 1x

Ingredients

Scale

4 cups seedless watermelon, cubed and frozen solid

23 tablespoons fresh lime juice (about 12 limes)

12 tablespoons low-carb sweetener (erythritol, monk fruit, or stevia)

1/41/2 cup cold water or ice

Optional: Fresh mint leaves for garnish

Instructions

1. 1. Prepare the Watermelon: Cut seedless watermelon into 1-inch cubes.

2. 2. Freeze the Watermelon: Arrange cubes in a single layer on a parchment-lined baking sheet. Freeze for at least 4-6 hours or until solid.

3. 3. Combine Ingredients: Transfer frozen watermelon to a high-powered blender. Add lime juice and low-carb sweetener.

4. 4. Add Liquid: Pour in 1/4 cup cold water or a few ice cubes. Start with less liquid.

5. 5. Blend Until Smooth: Blend on low speed, increasing to high. Use a tamper if needed. Blend until smooth and thick.

6. 6. Adjust Consistency and Sweetness: Taste and add more sweetener if desired. If too thick, add more water or lime juice 1 tablespoon at a time and blend again.

7. 7. Serve Immediately: Pour into chilled glasses. Garnish with lime wedge or mint sprig. Serve right away.

Notes

For best texture, freeze watermelon in a single layer to prevent clumping. Use a ripe watermelon for natural sweetness. If using a standard blender, let frozen watermelon soften for 5-10 minutes at room temperature before blending, and pulse with extra liquid. Adjust sweetness and tartness to taste. Slushie is best enjoyed fresh; leftovers can be frozen and re-blended with a splash of water or lime juice.
